Boro is the first Medellín restaurant from Jaime Rodríguez, the chef of Celele in Cartagena, which ranked fifth on Latin America's 50 Best Restaurants 2025. It opened in late June 2026 on the second floor of a hotel in Provenza.
It's a bistro, looser than Celele's long tasting menu. The menu moves through the country's ecosystems: the Montes de María, the Amazon, the Caribbean, the Chocó coast and the Andes. There's seasonal fish, native mushrooms, cuts of meat and Andean tubers, cooked over fire and embers or fermented.
Desserts lean on the sour side of native fruits and on Amazonian cacao varieties. It also serves breakfast, with house-made sausages, jams and granola, and products you rarely find in the city, like cubios, chuguas or arazá.
