Mondongo's opened on October 9, 1976, in a space for about 20 people. Octavio Velásquez and Julieta Vargas, from Ciudad Bolívar, Antioquia, founded it with the mondongo recipe people ate in their town on Sundays after mass.

Later it moved to a bigger place on Carrera 70 in Laureles, where it still is, and in March 1995 the Calle 10 location opened in El Poblado. In 2001 they also opened in Miami.

Besides mondongo, the menu has ajiaco and a traditional Antioquian plate. At lunchtime a line forms, especially on weekends.
